it's not about devaluing the education they want, but maybe they just don't want to be responsible for hiring someone who's only looking for a paycheck and doesn't care about the job, and $15/hr isn't that unreasonable for seasonal work with a 'desired' background

the actual skill required is 'show up on time and be thorough.' no degree covers that.
